* ½ cup creamy peanut butter
* 2 cups milk chocolate chips
* 1 tablespoon coconut oil (optional)

Instructions:
* Spread a generous layer of peanut butter over one Ritz cracker.
* Place another cracker on top to make a sandwich.
* Repeat with the remaining crackers.
* Melt the chocolate chips with coconut oil until smooth.
* Spread or dip the cracker sandwiches in melted chocolate, coating the tops generously.
* Add Christmas sprinkles while the chocolate is still soft.
* Refrigerate for 20–30 minutes, until the chocolate is completely set.
